About this recipe
This potato and sausage omelette is a delicious meal that comes together in under 30 minutes, using basic ingredients most people will have stocked in their kitchens. Its definitely a good option when you haven’t had time to pick up groceries. All you need is some eggs, potatoes, an onion, and a sausage.
Ingredients
1 sausage link: I use a homemade spicy sausage for this recipe, I realize most people don’t have homemade sausages stocked in their freezer so I recommend using your favourite store bought sausage. It can be spicy or mild or somewhere in between.
1/3c extra virgin olive oil: my favourite type of oil! Avocado oil is also a great choice.
2 medium sized white or yellow potatoes: r enough to fill your skillet. White or yellow potatoes will work here, just make sure you slice them thinly so that they cook all the way through and you’re able to press them down into an even layer in the skillet.
1/2 a large white or yellow onion: also thinly sliced
4 large eggs: use room temperature eggs but cold will do if you forget to take them out ahead of time
Instructions
Start by removing the sausage from its casing and brown it in the pan while breaking it up into small pieces with a spatula or wooden spoon. Once cooked through remove it to a dish and set aside.
Next to the same skillet add the olive oil, potatoes, onions, and season with salt and pepper. Stir well to ensure each potato slice is coated in oil. Cover with a lid and let it cook for about 10 minutes, stirring halfway through, until potatoes are tender but not brown. Once cooked remove the potatoes and add them to a large bowl.
To the potatoes add the sausage and whisked eggs and mix everything together well. Return the mixture to the skillet, flattening the top into an even layer with a spatula.
Cook covered on medium heat until the bottom is golden brown and most of the eggs set. Use a plate to help you flip the omelette over and cook on the other side.
Variations and substitutions
Substitutes for sausage:
- diced ham
- kolbasa
- pancetta
Vegetarian variation:
- Substitute the sausage for mushrooms, or leave it out altogether.
Cooking Tips and Tricks
The potatoes
The initial cook is to get the potatoes tender and evenly cooked through. If your potatoes start to brown (prior to adding the eggs), turn down the heat and give it a good stir.
Flipping the omelette
Before flipping the omelette you’ll want to make sure that the bottom is browned, and most of the eggs are set. If you try to flip it sooner, it will break apart into a big mess. The easiest way to flip the omelette is to use two plates:
- Slide the omelette onto a plate
- Use a second plate, upside-down, to cover the omelette
- Grab the plates like you would grab a burger, thumbs on the bottom plate, the rest of the fingers on the top plate
- In one smooth motion, flip the plate burger away from you
- Remove the plate on top, then slide the omelette back into the skillet
Be careful not to burn your fingers at any point while flipping the omelette, as the plates will heat up if you don’t work quickly. If the omelette ends up breaking don’t worry! Place the pieces as best you can into the skillet, it may not look as pretty bit I promise it will still taste wonderful.’
Non stick skillet
A non stick skillet is the best choice for this recipe to make sure flipping the omelette is successful. If you don’t have a 10 inch skillet, a slightly bigger one will work too but the flip will be slightly harder to do. Make sure to reduce the cooking time since the omelette will be thinner when using a larger skillet.
Storage instructions
I recommend serving warm or at room temperature. It will keep in the fridge for up to 3 days.
Additional Notes
I usually serve a simple garden salad alongside this omelette. It’s a great light accompaniment that you can customize with any vegetables and dressing you like. Some other great options would be coleslaw, Caesar salad, or crudités.

This potato and sausage omelette is the perfect pantry dinner, made with staple ingredients and wholesome for the entire family.
Ingredients
- 1 sausage link of your choice
- 1/3c extra virgin olive oil
- 2 medium sized white potatoes, thinly sliced
- 1/2 a large white or yellow onion, sliced
- 4 extra large eggs
- salt and pepper to taste
Instructions
- Place a 10 inch non stick skillet over medium heat. Remove the sausage from its casing (discard casing) and brown it in the pan while breaking it up into small pieces. Once cooked through remove it to a dish and set aside.
- Add the extra virgin olive oil to the same skillet over medium heat. Add the potatoes, onions, salt, pepper, and stir well to ensure each potato slice is coated in oil. Cover and elt cook about 10 min, stirring every few min. We want the potatoes to be tender but not brown. Once cooked remove potatoes to a large bowl.
- Add the sausage to the potatoes and mix. Whish the eggs well and add them to the bowl, mix, and return to the skillet, flattening the top to make an even layer.
- Cook covered on medium heat for about 8 min, you want the bottom to brown and most of the eggs to be set. Use a plate to help you flip the omelette and cook on the other side uncovered for 5 min.
- Remove from the skillet, let rest 5 min before slicing.
