Sometimes all I want is a big bowl of fresh veggies, and spring is the perfect season to enjoy this type of salad. There are so many fresh veggies to choose from once spring hits, add any ones you like! I love some good sugar snap peas and like to split the pods open to expose all the gorgeous peas inside, and it makes the salad look a little fancy.
This salad is very customizable, feel free to add in your favourite in season veggies. Wander through your local farmers market and choose anything that looks fresh. If you need some inspiration, here’s a list of wonderful spring produce:
- Arugula/rocket
- Asparagus – would be a wonderful addition shaved!
- Carrots – they’re available in so many beautiful colours, thinly slice them with a food processor to make different coloured moons in your salad
- Chard
- Dandelion greens – good quality ones will have a bitter flavour
- Fennel
- Fiddle heads
- Green garlic
- Kale
- Peas
- Spinach
- Spring/green onions
And so many more! Besides the sugar snap peas I chose some spicy radishes, arugula, kale, cherry tomatoes, and thinly sliced carrots. I had to add an avocado (if you know me then this is of no surprise as my avocado obsession has been going strong for years. I opted to keep this salad strictly veg so that the produce flavours can really shine. You could of course add some cheese (goat or feta would be great) if you like or some protein (think grilled shrimp).
The dressing for this salad is bright from the orange and lemon juice, but zesty from the fresh ginger. A good blob of honey adds some sweetness to round out the flavours here.
Spring Veg Salad with Ginger Citrus Dressing
Fresh and in season spring vegetables topped with a zingy ginger citrus dressing
Ingredients
Salad
- 4-5c arugula and baby kale
- 2 radishes, thinly sliced
- 1/3 of an English cucumber, thinly sliced
- 1 carrot, peeled & thinly sliced
- 1c sugar snap peas
- 1/2c cherry tomatoes, halved
- 1 avocado, cut into thick wedges
Ginger Citrus Dressing
- 2tsps freshly grated ginger
- 1 tbsp honey
- juice of half a lemon
- juice of half an orange
- 1/3c extra virgin olive oil
- sea salt to taste
- freshly ground black pepper
Instructions
- In a large bowl toss all of the salad ingredients together.
- in a medium sized bowl whick all of the ginger citrus dressing ingredients together.
- Top salad with as much dressing as desired.
Notes
Add any in season vegetables of your preference.
If desired, add your protein of choice: chicken breast, shrimp, tofu etc.
Keep extra dressing stored in an airtight container in the fridge for 2-3 days.
